RECIPE – Salmon and Sweet Potato Hash

Enjoy your hearty and nutritious Salmon and Sweet Potato Hash! This meal is rich in omega-3 fatty acids from salmon, which are beneficial for thyroid health and overall well-being. Sweet potatoes provide a healthy source of carbohydrates, fiber, and essential vitamins, making it a well-rounded and thyroid-friendly dish.

Ingredients:

  • 2 salmon fillets (wild-caught if possible)
  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish (optional)

Instructions:

  1. Preheat your oven to 200°C (390°F).
  2. Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Bake in the preheated oven for about 12-15 minutes or until the salmon is cooked through and flakes easily with a fork. Once done, set aside.
  3. In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
  4. Add the diced sweet potatoes to the skillet and cook for about 10 minutes, stirring occasionally until they begin to soften.
  5. Add the chopped onion and diced red bell pepper to the skillet. Cook for another 5 minutes or until the vegetables are tender and slightly caramelized.
  6. Stir in the minced garlic, ground cumin, and smoked paprika. Cook for an additional 1-2 minutes, allowing the flavors to meld.
  7. Break the baked salmon into chunks and gently fold it into the sweet potato hash. Cook for a few minutes until the salmon is heated through.
  8. Season with salt and pepper to taste.
  9. Serve the Salmon and Sweet Potato Hash in bowls and garnish with fresh parsley or cilantro, if desired.
